Avocado & Salsa, Egg White Toast

Avocado toast is a regular breakfast or snack for me. It’s healthy, delicious, and pretty easy to make. The options are endless. What kind of bread? To egg or not to egg? Smoked salmon anyone?

Ingredients

2 scramble egg whites

½ ripe medium avocado

2 slices Ezekiel bread

2 tbsp.salsa

chopped fresh cilantro

salt & pepper

Preparation

Separate your egg white & yolk. Scramble your egg whites. Toast the bread. Cut in half and slice the flesh of the avocado half without the pit. Spread/smoosh ¼ of avocado onto each slice of toasted bread and top with the salsa and egg whites. Season with salt and pepper. Top with cilantro (optional). Serving could be one or two pieces of toast. Pack the other half of the avocado with the pit for toast on another day.


You can eat both avocado toasts or share with a friend - depending on your dietary needs and how hungry you are.
