Ezekiel Muffins, Three Ways

I love Ezekiel muffins. They have great texture. The combination of grains and legumes in Ezekiel bread makes the protein available in this bread a “complete protein” meaning it contains all 9 essential amino acids that you must get from your diet. By combining multiple grains and legumes, your bread becomes power packed with nutrients that you would not get from using only one grain. Most of the time I eat them for breakfast with peanut butter but they are versatile and I have some other yummy ideas too.


Mascarpone & Strawberries


Toast your muffins and chop some strawberries. Spread a tablespoon or more of Mascarpone cheese on each muffin. Place the strawberries on top. You can optionally add a sprinkle of Truvia Stevia sweetener on top.


Smoked Salmon on Ezekiel


Toast the muffins and let them cool for a couple minutes while you grab the some plain Greek yogurt, 4 oz smoked salmon, and arugula out of the fridge. Mix the juice from half a lemon, three tablespoons of olive oil, some dashes and cracks of salt and pepper in a small bowl. Spread a tablespoon or so of plain Greek yogurt on each muffin half. Divide the salmon on top of the Greek yogurt. Top with a few leaves of arugula, drizzle with the lemon dressing. Twist a few cracks of pepper over the top.



Ezekiel Muffin Pizzas


Did you make mini English muffin pizzas as a kid? Or maybe you just have a craving and need a healthier option. I got you. Get your muffins toasted and get the shredded mozzarella cheese out of the fridge.


You can top your pizzas with anything. The Hubby's favorite is pepperoni and I often have it for my meat and cheese boards. I love mushrooms, black olives, and sausage myself. For the sauce, you could keep it simple and purchase a ready made tomato, pesto, bruschetta or salsa. If you have the time toss a container of grape tomatoes and 2-3 fresh garlic cloves in olive oil, salt, and pepper then roast in a 400 degree oven for 20 minutes. Put the tomatoes and garlic in your blender with a tbsp of Gourmet Gardens Italian Herb Paste and a pinch of red pepper flakes. Pulse until the consistency brings you joy. Spread the sauce on your muffins, sprinkle with shredded mozzarella, add the toppings and melt the cheese for 2-3 minuets under the broiler or in the toaster oven. It's not delivery it's de muffin.
